The final blend is a beautifully bone-dry, funk-forward representation of a Barrel-aged American Sour Ale. We discovered a few barrels of lovely hyper-sour one year old beer that melded perfectly with the fruity two year old brett saison and the very funk-forward three year old sour saison. However, we held onto multiple barrels specifically for additional aging & a three year blend.Īt the beginning of 2022, we sampled every single barrel of mixed-fermentation beer in our possession that was over one year old. The majority of those barrels have already been used in previous blends most notably The Waves Have Come and What The Waves Left Behind. We brewed a large batch of clean saison destined for barrels where various wild yeasts & bacteria were added for an extensive secondary fermentation in oak. Absolutely no sugar or malt extract was added to boost the ABV. To get such a high starting gravity, Summon The Moon Lord utilizes a triple mash with 100% malted barley. This English-style Barleywine was boiled for 24 hours (a standard boil length is one hour) for intense natural caramelization. The amount of research, energy, time and raw materials that went into this beer is staggering.
